The organic market in Austria is growing strongly.

The Austrian organic market picked up significant momentum again in 2025. Sales of organic products reached approximately €3.4 billion. Compared to 2024, this represents an increase of 7.4 percent, as shown in the latest sales analysis by AMA Marketing . This means that organic sales grew considerably faster than the inflation rate of 3.7 percent.
This gap is particularly noteworthy for the food industry. The increase in sales cannot be explained solely by higher prices. According to AMA Marketing, more organic products were actually sold. For bakeries, confectioneries, and food service establishments, it is especially interesting that this positive trend is not limited to traditional grocery retail.
Organic products are growing through multiple sales channels
Grocery retail remains by far the most important sales channel for organic products. Around 80 percent of total organic sales were generated there in 2025. Direct sales and specialist retailers accounted for a further 12 percent, while the food service industry reached a share of 8 percent.
Developments outside of traditional retail are particularly relevant for the food industry. Specialty shops, direct marketers, and restaurants are benefiting from the fact that consumers are apparently increasingly incorporating organic products into their purchasing decisions.
“The figures show that organic products have regained significant momentum after the challenging past few years,” says Christina Mutenthaler-Sipek , Managing Director of AMA Marketing. She particularly welcomes the fact that this development is noticeable in food retail, the restaurant industry, direct sales, and specialist retailers.
The restaurant industry is gaining importance in the organic sector.
The restaurant sector has developed particularly dynamically. The share of organic food there has risen steadily in recent years, most recently reaching 4.5 percent.
For businesses with cafés, breakfast offerings, snacks, or lunch service, this development opens up additional opportunities. Organic products are therefore no longer solely a topic for supermarket shelves. The segment is also increasingly finding its place in the out-of-home consumption sector.
For bakeries and confectioneries, this development can be particularly interesting with regard to raw materials such as flour, dairy products, eggs, or other ingredients, as well as the positioning of individual product lines. However, the AMA figures themselves do not indicate which product groups within the food service industry are experiencing particularly strong growth.
Trade reaches high levels again
Organic products have also recovered in the food retail sector after a weaker period. The organic share of food and beverages reached 11 percent again in 2025, returning to the high levels of 2021 and 2022.
During the COVID-19 pandemic, demand for organic products rose sharply. Afterwards, this trend initially slowed. However, a clear upward trend resumed in 2025.
The organic share is even higher outside of traditional food retail. In direct sales and specialist shops, it reached 23 percent.

These figures mark a noticeable change compared to the more difficult years following the pandemic-driven organic boom. A sales growth of 7.4 percent with an inflation rate of 3.7 percent suggests that organic products not only grew in nominal terms in 2025, but also through higher sales volumes.
For the Austrian food industry, the broad development is particularly interesting. Organic products are growing not only where large retail chains dictate the product range and pricing. Specialty retailers, direct sales, and the food service industry are also gaining ground.
For artisan bakeries and confectioneries in particular, organic products can once again become a key differentiator. However, the crucial factor remains whether such a product range suits the business, its customers, and its pricing strategy. In any case, the overall Austrian market offers more favorable conditions for this than it did a few years ago.
